Pavlova

What is a Pavlova? Marshmallow like meringue. Crisp outer shell and marshmallow center.It’s a dessert named after Russian Ballet Dancer, Anna Pavlova from the 1920s.

Ingredients
2ea Egg Whites
½ c Sugar, granulated
¼ t Pure Vanilla Extract
½ t White Distilled Vinegar
1t Cornstarch

Method of Preparation:
Pre-heat oven to 250 degrees
Whip whites to soft peaks, add a pinch of cream of tartar if necessary
Slowly add sugar while whipping
Whip on high until meringue reaches stiff and shiny peaks
Whip in vanilla
Fold in vinegar and sifted cornstarch
Pipe onto papered sheet pan
Bake for about 1 hour (or until outside becomes dry and pale cream color)
Shut off oven and leave door ajar, to allow Pavlova to adjust from hot oven to cool kitchen (this will help prevent large cracks)
Use within a few days
Top with fresh fruit, assorted sauces, and your favorite sorbet or gelato
